Dahi Vada with Khatta Metta Chutney

Dahi Vada

Steps to follow:

  • Soak the urad dal overnight or for at least 4-5 hours. Drain them.
  • Grind the urad dal with little water to a smooth fluffy batter.
  • Take the ground batter in a bowl.
  • Heat oil for deep frying. Either drop the batter with your hands or with a spoon in medium hot oil. Fry the vada in batches till crisp and golden.
  • Drain the vada on paper towels
  • When they are still warm, add the vada in water (at room temperature) and let them soak for 18-20 minutes.
  • Press each soaked vada between your palms to remove water. Gently press or else you might end up breaking them.
  • Prepare vada and let it cool for sometime
  • Soak the vada in water for 5 minutes
  • Then place the vada in a bowl and pour Dahi with salt and sugar
  • Add Khatta Meetha Chutney
  • Add some ground carrot and chopped onions
  • Add the tempering and serve

*For tempering – Heat the oil and mustard seeds with curry leaves

Khatta Meetha Chutney

The word “chutney” derives from Hindi / Urdu chaṭnī, deriving from chāṭnā “to lick” or “to eat with appetite”. An origin has also been claimed for Tamil சட்னி caṭṉi. In India, “chutney” refers to fresh and pickled preparations indiscriminately.

Khatta Chutney

Ingredients

  • 1 cup coriander
  • 1/2 cup mint
  • small amount of chopped ginger
  • 1 tbsp salt (to taste)
  • 2 green chillies

Steps to follow:

  1. Add the mixture and grind it to a paste.
  2. Add water to bring it to a thin consistency.

Meetha Chutney

Ingredients

  • Take hand full of Tarmind
  • 1 tsp of Asafetida
  • 3 tsp of Sugar

Steps to follow:

  1. Take lemon size of Tamarind and soak it in water
  2. Boil the water for 10 minutes
  3. Now, take all the Tamarind and grind it smoothly
  4. Take a pan and add oil
  5. Once the oil is hot, add Asafetida and ground the mixture well
  6. Let it boil for another 1 minute
  7. Add 3 tsp of Sugar in the mixture
  8. Now, drain the water from the tamarind concentrate to bring to a thin consistency.
  9. Boil it for 5 minutes and let it cool

Dahi Vada with Khatta Meetha Chutney is READY!!!
